Raisin Bran Muffins

These muffins are full of fiber and great taste. They are easy to make. Your family will love them. You just need a few simple ingredients. Here's the breakdown!


Preheat your oven to 400 F

Add to a large bowl

1 1/2 cups self rising flour
3 cups raisin bran (may substitute any fiber flakes cereal)
1/4 cup sugar
2 T honey
1/3 cup ground flax seed (may substitute wheat germ or just omit)
1 cup milk (any milk will do almond, fat free)
1 slightly beaten egg
1/3 cup canola or vegetable oil
1 teaspoon vanilla extract or 1/2 teaspoon almond extract
2 teaspoons cinnamon

Stir. Place in muffin tins. I find it best to use liners for easy clean up and  an ice cream
scoop insures perfect portions. Bake in preheated 400 F oven for about 25 minutes. This recipe makes 12 muffins. Enjoy!
