EASY HOMEMADE SOUTHERN CORNBREAD



SOUTHERN CORNBREAD

1 Cup Yellow cornmeal
1 Cup self-rising flour
1 Tablespoon baking powder
1 or 2 Tablespoons Sugar
1 large egg++
1 cup milk 
1 pinch of salt
1/4 cup (1/2 stick) salted butter++

Preheat oven 450 F. Place butter in 8 inch cake pan. Place pan in oven while the oven preheats to melt the butter. In medium bowl:  Whisk together cornmeal, flour, baking powder, sugar, salt. In small bowl: Whisk together milk and egg. Make a well in the center of the dry ingredients and pour in the wet ingredients. Mix. Remove the butter from the oven. Pour 1/2 of the butter in the cornbread mixture. Stir in the butter. Pour cornbread mixture into the hot pan. Replace in 450 F oven. Bake for 15 minutes. 

Turn down temp to 400 F. Bake an additional 5 minutes. This will make the cornbread crunchy on top and moist on the inside. This cornbread rounds out the vegetable beef soup recipe. You can find that soup recipe in the blog.

++HHV (Heart Healthy Version) use vegetable oil instead of butter. use egg substitute in place of the large egg.
