Stuffed Bell Pepper




Stuffed Bell Pepper

 4 small or medium sized red bell pepper wash and dried. Cut off tops, clean out the seeds. ( red bell pepper is high in vitamin C)
1/2 lb browned ground meat (lean ground sirloin Vitamin B 12)
1 Cup cooked brown rice* (high in fiber)
1 can Rotel salsa (drained)
1 can low sodium corn
1/2 Cup Green onion and 
1/2 Cup green bell pepper
1 can dark red kidney beans drained and rinsed (high in fiber) optional
**Seasonings of your choice salt & pepper for a heart healthy dish eliminate the salt.**



Preheat oven 350 F.

Place peppers in shallow baking dish (Pyrex) cover in foil (for easy clean up). Lightly season the inside of the pepper. Stir the rest of the ingredients and stuff into the pepper. May top with cheese or use some soft tofu for extra low fat protein. Sprinkle the peppers with heart healthy olive oil. These will take 15 - 20 minutes to heat through.
