FRIED BROWN RICE & VEGETABLES GLUTEN FREE

FRIED BROWN RICE & VEGETABLES

1 bag of frozen mixed veggies PPPI (prepped per package instructions), drained
1 egg
1 small onion chopped
1 clove garlic minced
red pepper flakes, salt, pepper to taste
2 cups cooked brown rice*
2 tablespoons vegetable oil

In large skillet: Heat 1 tablespoon oil, add onion, garlic, red pepper flakes, scramble egg in
the skillet. Add Rice, 1 tablespoon oil, salt and pepper, and veggies.

*Best to use left over refrigerated brown rice.
