FLUFFY HOMEMADE WAFFLES

After a long work week, I love to start my weekend with something delicious, but simple.

WAFFLE INGREDIENTS:                                                                

2 C self rising flour                                                                       
2 eggs slightly beaten                                                                       
1 1/2 C milk                                                                                 
1 teaspoon vanilla extract                                                              
1 Tablespoon Sugar (optional)                          
2 Tablespoons salted butter (melted)                                                      


Heat Waffle Iron*. Mix together all ingredients. The batter will be a little lumpy. Be careful not to over mix it will make the Waffle tough. Pour into heated waffle iron. TIME SAVER: While the waffle iron is hot, cook all the batter. Store the extra waffles in a storage bag, and you can pop them in the toaster or microwave for a quick breakfast.

Heart Healthy Version (HHV)

2 C self rising flour
use eggs substitute equivalent of 2 eggs
1 1/2 C fat free milk
1 teaspooon vanilla extract
1 T sugar (optional)
2 Tablespoons vegetable oil or canola oil ( mix and cook as directed above) 

*No waffle iron? This recipe also makes great pancakes.
